lightness of mind
and every color in between

Dear little kitchen diary,
Today, I deliver food to the hospital. What honor and joy is mine! In this corner of the world, it is customary to have home-cooked meals in hospitals. The food served isn’t always as, let’s just say tasty, so it is very normal to deliver home-cooked meals to friends, relatives, neighbors, the perfect stranger who usually shares a room with five or more.
I am preparing one of the most typical dishes loved by many here, cutlets and potatoes. The cutlets, patties, are normally made with pork, but not when I make them. Along with ground chicken breast (I personally prefer no meat), I use extra grated veggies in my mix. Shhhh… everybody loves them.
If everything turns out pretty, I may or may not share a peek. What are you UP to?
Father, I am so very grateful for my gift of laughter and with it the opportunity to transform every atmosphere, to take Your joy to the ends of the earth and back to You, where it brings You an audible bubbly smile, one that I clearly feel as a thousand laughing stars over me each and every breath.
